Oatmeal Chocolate Chip Muffins

Out of all my baking, these muffins are definitely the healthiest. They are dairy-free (besides the chocolate chips), 100% whole grain, and low in sugar. The cinnamon, oat, and chocolate flavors melt in your mouth. If you do not want chocolate you can always leave those out and still have an amazing muffin.


These muffins are super easy to whip up in less than 30 minutes, and there is no requirement for an electrical mixer, just a hand held whisk. While they do take minimal time to make, they also are gone in the same time! It is such a nice treat that go perfectly with a good cup of coffee.


Something I love doing with these muffins is baking a batch on Sunday night and heating one up every morning for the rest of the week. During the morning when I need to rush to leave the house it is difficult to have a nutritional breakfast, but these muffins do the trick! It is such a great way to start off my day when I know I have a lot of work to do.

Ingredients


1 cup (80 grams) Old-Fashioned Oats

1 cup (24o grams) Oat Milk- or any milk you prefer

1 cup (130 grams) Whole Wheat Flour

1 teaspoon (4 grams) Baking Soda

1/4 (1.5 grams) teaspoon Salt

1/2 (2 grams) teaspoon cinnamon

1/3 cup (65 grams) brown sugar

1 Egg

1/4 cup (1/2 stick, 56.5 grams) Unsalted Butter softened

2 teaspoons (4.2 grams) Vanilla Extract

1 cup (170 grams) Semisweet Chocolate Chips


Directions


Step 1

Preheat oven to 350°F (177°C). Line muffin/cupcake tin with with muffin liners (parchment paper liners work best).


Step 2

Combine oats and milk in a medium-sized bowl and let those soak while you prepare the rest of the recipe, to soften the oats.

Step 3

In a large bowl with a handheld whisk, whisk together the egg and brown sugar until smooth and caramel colored.

Step 4

Add vanilla and butter and whisk to combine. You may have small pieces of butter in the mixture, which is normal.

Step 5

Add flour, out-milk mixture, baking soda, salt, and cinnamon. Mix until well combined, but don't over mix.

Step 6

Using a rubber spatula, fold in the chocolate chips.

Step 7

Fill each muffin tin evenly with muffin batter, they will be about 2/3 full.

Step 8

Bake for 15-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean. There is no need to let them cool, enjoy them while they're hot!!!
